"BIG STUFF IN A LITTLE SKILLET" | |
The name of this recipe came from a time when me and my family were camping on the river in Missouri. I have a large family, there are 5 of us. My mom, being the lovely person that she is, forgot skillets. All she brought was this tiny little cast-iron skillet, so we had a hard time cooking food for 5 people in this really small skillet! My dad is the cook in our family. Well, we were on our last day there and he wanted to cook breakfast, this was all the food we had in the cooler. He had to cook each ingredient individually. He would cook them and not have anywhere to put it. All we had was one big bowl. He mixed it all up in there and ever since then we love it and we have it all the time! 4 or 5 medium potatoes, diced 1 lb. bulk sausage 1/2 medium onion, chopped 1/2 medium green pepper, chopped 5 or 6 large eggs, beaten salt and pepper, to taste 1 tbsp. oil Cut potatoes into cubes, peeled or unpeeled. Add a tablespoon of cooking oil to a skillet and fry. Put on a plate covered with paper towels which allows the grease to seep out. Cook sausage, onion and green pepper in a large skillet. Leave a fair amount of grease. Prepare scrambled eggs. Season with salt and pepper. Combine all ingredients in a large bowl and enjoy! Submitted by: Stefanie Lyons |
