JALAPENO SPINACH | |
2 (10 oz.) pkg. frozen spinach 4 tbsp. butter 2 tbsp. flour 1/2 c. evaporated milk 2 tbsp. minced onion 1/2 tsp. black pepper 3/4 tsp. celery salt 3/4 tsp. garlic salt 1 (6 oz.) jalapeno cheese Well-buttered bread crumbs Cook spinach as directed on package until just done. Drain and reserve juice in measuring cup. You should have about 1/2 cup; if necessary, add enough water to spinach juice to equal 1/2 cup. Melt butter, stir in flour; then add milk and spinach juice. Stir until thickened, then add onions, seasonings and cheese. Stir until cheese melts. Combine with drained spinach and put in buttered casserole. Top generously with buttered crumbs. Bake at 375 degrees for 20 to 30 minutes. |
