BLUEBERRY MUFFINS 
1/2 c. rolled oats
1/2 c. orange juice
1/2 c. sugar
1 1/2 c. all-purpose flour
1/4 tsp. baking powder
1/2 tsp. salt
1/4 tsp. baking soda
1/2 c. oil
1 egg, slightly beaten
1 c. fresh or frozen blueberries

Preheat oven to 400 degrees. Line 12 baking cups.

In a large bowl, combine oats and orange juice; stir well. Add flour, sugar, baking powder, salt, soda, oil and egg. Mix well. Stir in blueberries. Spoon into prepared muffin cups (2/3 full).

TOPPING:

2 tbsp. sugar
1/4 tsp. cinnamon

Mix together and sprinkle on top of muffins before baking. Bake for 18-22 minutes until golden brown.

Mix blueberries in frozen, this way they won't bleed.
