CRUNCHY BLUEBERRY MUFFINS 
1 3/4 c. flour
1/3 c. sugar
1 tbsp. grated orange rind
2 1/2 tsp. baking powder
1/2 tsp. salt
3/4 c. frozen blueberries
2/3 c. milk
1/4 c. orange juice
1 egg
2 tbsp. oil
1/4 c. chopped nuts
2 tbsp. sugar
1/4 tsp. nutmeg

Mix flour and 1/3 cup sugar, orange rind, baking powder and salt. Stir well to blend in blueberries. Combine milk, orange juice, egg and oil. Beat slightly. Mix flour and liquid mixture together. Grease muffin pan. Combine nuts, 2 tablespoons sugar and nutmeg. Sprinkle over muffins. Bake at 425 degrees for 18-20 minutes. Makes 1 dozen.
