ZUCCHINI ROUNDS 
1 1/3 c. Jiffy biscuit mix
1/4 c. parmesan cheese
1/8 tsp. pepper
2 c. shredded zucchini
2 tbsp. butter
2 eggs, slightly beaten

Stir together biscuit mix, cheese and pepper. Stir in eggs just until moistened. Fold in zucchini. In skillet melt butter. Drop in 2 tablespoons of mixture for each round. Saute 2 to 3 minutes. Drain on paper towel.
