“PEANUT BRITTLE” IS IN:

PEANUT BRITTLE 
2 cups sugar
1/2 cup water
1 cup light corn syrup
2 cups raw peanuts
dash salt
1 tsp. (heaping) baking soda
1 tsp. vanilla flavoring

Combine sugar, water and corn syrup in large heavy saucepan; boil until small amount of mixture forms a hard ball when dropped into cold water (250-266°F on candy thermometer).

Remove from heat; add peanuts and salt.

Note: Mixture will be quite thick.

Return to heat; boil until mixture is golden brown and nuts are done.

Remove from heat; add baking soda and vanilla flavoring. Pour into well buttered surface; smooth out thin.

Crack when cooled.

Cooks Note: Use of a candy thermometer is recommended.
