“PEANUT BRITTLE” IS IN:

PEANUT BRITTLE 
2 cups sugar
1 cup light corn syrup
1/2 cup water
2 cups raw peanuts
1 tbsp. (heaping) butter
1 tsp. vanilla flavoring
2 tsp. baking soda

Combine sugar, corn syrup and water; cook until small amount of mixture tested in cold water crackles against cup (300-310°F on candy thermometer).

Add peanuts and butter; cook until peanuts begin to brown. Remove from heat; add vanilla flavoring and baking soda.

Pour onto large buttered sheet.

When cool enough to handle, pull and stretch at edges. Break off pieces; continue to pull until all is thin and brittle.

Cooks Note: Use of a candy thermometer is recommended.
