BROWN RICE AND VEGETABLE STIR
FRY
 
3 tbsp. vegetable oil
1 c. sliced carrots
1 med. onion, sliced
1 clove garlic
1 green pepper, seeded, cut into strips
2 c. broccoli flowerets
1 c. sliced mushrooms
2 c. bean sprouts
1 c. brown rice, cooked
1/4 c. soy sauce
Salt and pepper

Have all ingredients ready before starting to cook. Heat oil in a wok or large skillet over high heat. Add carrots, cook 1 minute. Add onion, garlic, green pepper and broccoli; cook and stir about 2 minutes. Add mushrooms; cook 1 minute. Add bean sprouts and rice. Cook until heated through. Season and serve.
