CARAMEL APPLE OATMEAL COOKIES 
CARAMEL APPLE:

4 small (or two large) Granny Smith apples (peeled, cored, and diced small)
1/2 cup (1 stick) butter
1 cup sugar

Place apples, butter and sugar in a sauté pan until over medium heat apples are tender and sugar is caramelized. Approximately 12 minutes.

OATMEAL COOKIES:

1 cup (2 sticks) butter, softened
1 cup brown sugar
1 egg
1 tsp. vanilla
1 tsp. baking soda
1 cup all-purpose flour
2 1/3 cups oatmeal
caramelized apples (see above)

Preheat oven to 350°F.

Blend butter, brown sugar, egg and vanilla. Add baking soda, flour, oatmeal and caramelized apples. Drop onto cookie sheet.

Bake at 350°F for 14 minutes.
