NICK'S SIMPLE TACOS | |
1/4 cup extra virgin olive oil half a large onion celery stick 1 clove garlic 1 lb. lean ground beef 3 oz. taco sauce (e.g. Ortega Medium) 1/3 small can of tomato paste 1 tsp. cumin 1/2 tsp. hot chili powder 1/4 tsp. parsley 1/4 tsp. basil dash of seasoning salt dash of all purpose seasoning dash of salt pinch of pepper pinch of cayenne pepper pinch of paprika Warm oil to low medium in medium sized frying pan. Liquify onion, celery, garlic in food processor. Empty into oil. Cook liquid mixture keeping under a boil, about 5 min. Stir frequently. Add ground beef, brown, breaking up as small as possible. Drain in colander and fry for a few minutes, turning over frequently. Meanwhile, mix remaining ingredients. Spoon into fried meat mixture. Mix well. Reduce heat to very low, allow sauce to cook flavor into meat, about 10 minutes. Turn over to prevent burning. Serve with warmed hard corn shells or soft tortillas. Garnish with shredded cheddar, lettuce, onion, peppers, sour cream and taco sauce. Serves 4. Submitted by: Nick |
