BABOOTI (SO. AFRICAN LAMB CURRY
WITH FRUIT)
 
2 lbs. ground lamb
2 onions
2 tbsp. vinegar
Salt to taste
1 tbsp. apricot jam (or 4 canned apricots)
2 firm bananas
2 tbsp. curry powder
2 cloves garlic
1 1/2 tbsp. sugar
1 (16 oz.) can tomatoes
1/4 c. sliced almonds
1 apple

Brown lamb and drain off excess fat.

Add curry powder, finely chopped onions and thinly sliced or shredded garlic. Cook until onions are transparent.

Add tomatoes, vinegar and sugar and bring to a boil.

Add chopped apple, sliced banana, canned apricots (each cut in half) and almonds. Cook until apples are reasonably soft. Serve with rice.
