PORK CHOPS WITH SOUR CREAM AND
MADEIRA
 
4 lean pork chops
4 tbsp. madeira
1/2 c. sour cream
Salt
Pepper

Pan broil pork chops. When tender and nicely browned, remove them from pan. If there is excess fat in pan, pour it off. Add madeira and sour cream, scraping flecks of meat and brown color into sauce. Return chops to pan and season to taste. Baste frequently and cook from 5-10 minutes.

Hints: Cast iron skillet is essential. Madeira wine means just that. Don't substitute. Use J. Gallo as dessert type far too expensive.
