CARROT CAKE AND CREAM CHEESE
FROSTING
 
2 c. flour
1 1/2 baking powder
1 tsp. salt
3 c. grated carrots
1/2 to 1 c. raisins
2 tsp. baking soda
2 tsp. cinnamon
2 c. sugar
4 eggs
1 c. chopped nuts
1 1/2 c. oil

FROSTING:8 oz. cream cheese1 lb. powdered sugar1 stick butter2 tsp. vanilla:

Mix together flour, soda, baking powder, cinnamon, and salt. Combine sugar and oil. Add eggs one at a time, alternating with flour mixture; mix well. Add carrots, nuts and raisins (if desired). Bake 45 minutes at 350 degrees in a 13" x 9" pan. Beat well cream cheese, butter, vanilla, and powdered sugar. Sprinkle with a few nuts.
