CAULIFLOWER IN CREAM SAUCE 
1 head cauliflower, cut into flowerettes

Boil cauliflower in salted water until barely tender. Drain and set aside. Keep warm.

CREAM SAUCE:

2 tbsp. butter
1 1/2 tbsp. flour
1 c. milk or cream
1/4 tsp. salt
Paprika (opt.)

Melt butter; stir in flour and seasoning. Slowly stir in milk, bring to boiling point. Boil 2 minutes. Stir constantly. Add paprika if desired. Pour over cooked, drained cauliflower.

Very delicious, my friend who is dear to me from Italy makes this dish but she adds a bay leaf to the milk while boiling and at the end adds cheddar cheese (remove bay leaf when pouring on top of cauliflower).
