HAMBURGER BUNS 
1 c. milk, scalded
1/2 c. sugar
1 tsp. salt
1/4 c. shortening
1 pkg. dry yeast (or 1 cake)
1 c. very warm water
2 eggs, beaten
6-7 c. sifted flour

Combine milk and shortening. Add sugar and salt. Dissolve yeast in water, stir into milk mixture. Add eggs and 3 cups flour. Beat until smooth. Knead in remaining flour, kneading for 10 minutes or until smooth and elastic.

Place in greased bowl, brush with soft shortening. Cover, let rise in a warm place for 1 hour. Punch down. Shape into buns or rolls. Place on greased cookie sheets. Brush lightly with melted shortening. Cover, let rise for 1 hour. Bake at 350 degrees for 20 minutes.
