STUFFED VEAL BREAST 
1 (5 lb.) veal breast, with pocket
1 pkg. potato pancake mix, prepared as directed
Garlic, salt, pepper to taste

Rub veal and cavity with garlic, salt and pepper. Fill loosely with potato stuffing. Place veal on rack in open roasting pan. Roast in slow oven -- 300 degrees for 2 1/2 to 3 hours. Serves 6.
