ZUCCHINI BREAD 
3 eggs
1 1/2 c. sugar
2 1/4 tsp. baking powder
1/2 tsp. salt (optional)
1 c. nuts
2 c. zucchini, peeled & grated
1 c. oil
3 tsp. cinnamon
2 c. flour
1 c. raisins
2 tsp. vanilla

Beat eggs and stir in oil, sugar, zucchini and vanilla. Sift dry ingredients and stir in egg mixture until well blended. Add raisins and nuts. Blend well.

Bake at 350 degrees for 1 hour in a well-greased loaf pan (use Pam). Cool in pan for 10 minutes before removing for serving. (Delicious with cream cheese.)

I use pecans and black walnuts.
