CARROT - WALNUT BARS | |
1 1/2 c. all-purpose flour 1 c. packed brown sugar 1 tsp. baking powder 1 tsp. ground cinnamon 1/2 tsp. baking soda 2 beaten eggs 2/3 c. cooking oil 1 tsp. vanilla 1 1/12 c. finely shredded carrot 3/4 c. chopped walnuts 1/2 c. coconut 1/2 of a recipe Cream Cheese Frosting Grease a 13 x 9 x 2 inch baking pan. Set pan aside. In a large mixing bowl stir together flour, brown sugar, baking powder, cinnamon and baking soda. Stir in eggs, oil and vanilla until thoroughly combined. Then stir in carrot, walnuts and coconut. Spread batter into the prepared baking pan. Bake in a 350 degree oven for 20 to 25 minutes or until a wooden toothpick inserted near the center comes out clean. Cool in pan on a rack. Frost with Cream Cheese Frosting. Cut into bars. Store in refrigerator. Makes 24. |
