CARROT - WALNUT BARS 
1 1/2 c. all-purpose flour
1 c. packed brown sugar
1 tsp. baking powder
1 tsp. ground cinnamon
1/2 tsp. baking soda
2 beaten eggs
2/3 c. cooking oil
1 tsp. vanilla
1 1/2 c. finely shredded carrot
3/4 c. chopped walnuts
1/2 c. coconut
Cream cheese frosting

In large mixing bowl stir together flour, brown sugar, baking powder, cinnamon and baking soda. Stir in eggs, oil and vanilla until thoroughly combined. Then stir in carrot, walnuts and coconut.

Bake in a greased 13 x 9 inch pan, 350 degrees for 20 to 25 minutes. Frost with cream cheese frosting after cake cools. Cut in 24 bars and store in refrigerator.
