CARROT BARS 
1 1/4 c. oil
2 c. sugar
3 eggs, beaten
2 tsp. vanilla
2 c. flour
1 c. walnuts
2 tsp. baking soda
1 tsp. salt
1 sm. can crushed pineapple & juice
1 c. coconut
2 c. grated carrots

FROSTING:

1/4 lb. butter
8 oz. cream cheese, softened
2 c. powdered sugar
1 tsp. vanilla

Mix oil, sugar, eggs and vanilla. Add dry ingredients. Mix. Add pineapple, coconut, carrots and walnuts. Pour into a 9"x13" pan and bake at 350 degrees for 20 minutes.
