TEA TABLE CARROT BARS 
4 eggs
2 c. sugar
1 1/2 c. oil
2 1/2 c. flour
2 tsp. baking soda
1 tsp. salt
2 tsp. cinnamon
2 (7 1/2 oz.) jars junior carrots baby food
Icing (recipe follows)

Cream eggs, sugar, and oil. Mix dry ingredients together and add to egg mixture. Stir in carrots. Bake at 350 degrees for 25 to 30 minutes in 2 pans (13 x 9 inch). Frost with icing and cut into 1 1/2 inch squares. Freezes well.

ICING:

8 oz. cream cheese
1/3 c. butter, softened
1/2 tsp. vanilla
3 1/2 c. confectioners' sugar

Mix all ingredients until smooth.
