SQUASH SAUTE 
2 tbsp. olive or vegetable oil
3/4 lb. cooked ham, cut in strips or sliced smoked sausage
1 c. diced green pepper
2 green onions, cut in 1 inch pieces
1 c. fresh pea pods
2 lg. tomatoes, quartered or 1 can tomato paste and 1 can tomato sauce
2 med. zucchini, sliced
1/4 tsp. thyme
1/4 tsp. salt
3 tbsp. grated Parmesan cheese

Heat oil in skillet. Saute ham or sausage until lightly browned and set aside. Saute green pepper and onions for 3 minutes; then add pea pods, tomatoes, zucchini, thyme, and salt. Cook and stir lightly over medium heat until vegetables are crisp and tender. Return meat to skillet and heat through. Transfer to serving dish and sprinkle with Parmesan cheese. Serves 4-6.
