INSTANT POTATO SOUP 
2 tbsp. onion, chopped
2 tbsp. butter
4 c. milk
4 servings worth of dry instant mashed potatoes
1/4 tsp. celery salt
1 1/2 tsp. salt
1/8 tsp. pepper

In a saucepan, saute onion in butter over low heat. Add milk, salts, pepper and instant potato flakes. Heat to almost boiling, stirring constantly. Remove from heat. Garnish with paprika, parsley or grated cheese. Add milk if it is too thick.

I was hungry for soup and needed something fast, I remembered I had instant potatoes and I love potato soup so searched and found this recipe. It was easy and seasoned just right without any changes. While I would prefer chunks of potatoes this is a great recipe to make when you don't have them and need something fast. I will make it again.

I think this is a five star recipe for what it is...a 5 min start to finish soup. Is it the best potato soup I've ever tasted? No. But it is very flavorful, very tasty, & nobody I served it to thought I used instant potatoes. I'll definitely pull this out again. I keep a round sourdough loaf in my freezer for using to serve with last minute dinners. I served this soup garnished with paprika and cheese, the bread, and a green salad & it was a satisfying meal.

Wonderful and easy recipe. I replaced some of the salt with chicken soup base the second time I made this and it gave it a wonderful flavor. A definite favorite I can't wait to share with my girls.

I'm going to make the instant potato soup recipe, only I'm going to add small chunks of ham to it. I want a comfort food type meal today, but I don't feel like doing a lot to have it. This sounds like a great combonation.

I made it as it was written the first time and it was good. The second time I sauted a small onion and 1/2 cup celery till soft. I then added a drained can of diced potatoes and it was even better!

I have made this for years. Some variations that are especially good are bacon and cheese - cheesy broccoli (add some frozen hash browns for added texture). My mother also used this base for "corn soup" - put corn in blender, add to base with chopped red and green peppers (seasoned to taste, of course).
