SWEET AND SOUR PORK OR SHRIMP 
1 lb. (or 1 c.) left over pork, cut into chunks or 1 lb. shrimp, frozen, cooked as directed
1/2 c. brown sugar
1/2 c. vinegar
2 tbsp. soy sauce
1 (9 oz.) can pineapple chunks, with juice
1 1/4 c. water
3 tbsp. cornstarch
1 green pepper, cut into strips

In a saucepan, blend brown sugar, vinegar, soy sauce, pineapple juice and 1 cup water. Bring to a boil. Stir together cornstarch and 1/4 cup water and blend into boiling mixture. Cook until thickened, about 1 or 2 minutes. Add green pepper and pineapple chunks. Stir in pork or shrimp and heat thoroughly. Serve with hot, fluffy rice.
