BEEF AND PEPPER RICE SKILLET 
1 1/2 lb. round steak, cut in thin strips
2 tbsp. cooking oil
1 c. sliced onion
1 can beef broth water
1 c. UNCLE BEN'S® converted rice
3 tbsp. soy sauce
2 green peppers, chopped
1 jar pimiento, drained

Brown beef in oil in 10" skillet. Stir in onion, rice, beef broth, 1 can water and soy sauce. Bring to a boil, reduce heat; cover and cook over low heat 25 minutes or until liquid is absorbed. Stir in green peppers and pimiento. You may omit the steak and use other meats such as ham, pork chops or roast.
