MOTHERLODE STRAWBERRY CHEESECAKE 
1 1/2 c. graham cracker crumbs
1/4 c. butter
2 1/2 tbsp. sugar

FILLING:

1 1/2 lbs. cream cheese
1 1/2 c. powdered sugar
3 lg. eggs
1/2 c. butter
1 tsp. vanilla
Fresh strawberries

Combine all crust ingredients and press into the bottom of a buttered 10 inch springform pan. Place in freezer and let set up 20 minutes.

For filling: Beat cream cheese and sugar together at high speed for 3 minutes. Add the eggs, cooled butter and vanilla and beat for another 5 minutes.

Preheat oven to 325 degrees. Pour cheese filling over crust and bake for 35-45 minutes. Cheesecake is done when it still slightly wiggles in center. Do not let surface brown. Let cool. Serve with sliced strawberries.
