1 1/4 c. graham cracker crumbs
3 tbsp. sugar
1/3 c. butter, melted

Put above ingredients in a bowl and mix with a fork; press into the bottom of a 10 inch springform pan; bake in a preheated 350 degree oven for 8 minutes.

FILLING:

5 (8 oz.) pkg. cream cheese
4 lg. eggs
2 tbsp. freshly squeezed lime juice
1 1/4 c. sugar

Beat filling until smooth. Pour over crust in springform pan and bake at 350 degrees for 50 to 60 minutes. Turn off the oven. DO NOT REMOVE THE CHEESECAKE FROM THE OVEN. Let it cool IN THE OVEN with the oven door ajar for 1 hour. Remove from oven. Preheat the oven again to 350 degrees.

TOPPING:

1 pt. sour cream
1/4 c. sugar
1 1/2 tbsp. vanilla extract

Mix the above together until well blended. Spoon over cheesecake and bake at 350 degrees for 5 minutes. Chill well before serving. May serve with strawberry sauce. Serves 16 to 20.
