SOPA DE ALBONDIGAS (Meat Ball
Soup)
 
1 tsp. oregano
1 sm. onion (chopped)
2 carrots (chopped)
1/4 head cabbage (chopped)
1 bell pepper (chopped)
1 clove garlic (minced)
1 can tomato sauce
2 celery sticks (chopped)
1 1/2 c. chicken broth
2 tbsp. cilantro (chopped) (optional)
Salt/pepper to taste

Combine broth ingredients. Boil 30 minutes. Last 5 minutes add Albondigas (meat balls).

ALBONDIGAS:

1 lb. ground beef
2 c. cooked rice
1 egg, slightly beaten
1/4 c. oil

Combine meat, cooked rice and brown in oil. Set aside to add to broth.
