CEREAL MEAT BALL SOUP 
1 (9 3/4 oz.) can beef broth
1 can water
1 (10 oz.) can whole tomatoes, drained and coarsely cut
1 cup cross-cut fresh or frozen green beans
1 tbsp. chopped parsley, optional
1/2 lb. ground beef
1/4 cup finely chopped onion
2/3 cup instant, hot whole wheat cereal
1 egg
1 tsp. salt
dash pepper

Combine broth and water; save 1/3 cup of liquid for meat balls. Combine remaining broth, tomatoes, green beans and parsley flakes; bring to a boil. Combine beef, onion, cereal, egg, salt, pepper and 1/3 cup broth; mix well. Shape meat mixture into 4 large balls, using 1/2 cup mixture for each ball. Lower meat balls into boiling broth, cover and simmer until meat is done, about 30 minutes. Add more broth, if necessary, to allow a generous serving with each meat ball.

Makes 4 servings.
