CALDO DE ALBONDIGAS (MEAT BALL
SOUP)
 
1 lb. ground beef
1/2 tsp. taco seasoning
1 egg
2 tbsp. raw rice
1/2 tsp. salt

Mix together. Make walnut size meat balls. Set aside. Bring 2 quarts of water to boil and add:

1 lg. onion, chopped
1 c. canned tomatoes (or fresh)
3 cloves garlic, chopped
1 tbsp. parsley or cilantro, chopped
1/2 tsp. cumin
3/4 tsp. salt
Dash of pepper

Bring back to a boil. Then add meat balls and simmer for 45 minutes.
