BREAKFAST BRAN MUFFINS 
1 whole egg or 2 egg whites, beaten
4 tbsp. liquid shortening
3/4 c. milk
2 c. whole wheat flour
1/2 c. sugar
3 tsp. baking powder
1/2 tsp. salt

Mix all ingredients together until flour is moistened. I use baking cup liners in muffin pans. Fill muffin cups 3/4 full. Bake for 20 minutes in 400 degree preheated oven. This makes 12 bran muffins.

For variety, I use 1 cup blueberries or 1/2 cup chopped walnuts or 1 cup raisins.
