BREAKFAST MUFFINS | |
1 c. old-fashioned oats 1 1/2 c. flour 2 tsp. cinnamon 1/2 tsp. baking soda 1 tsp. baking powder 1/2 tsp. salt 1 c. butter 1 c. brown sugar 1 c. white sugar 2 eggs 1 tsp. vanilla 1 c. each of chopped walnuts, coconut, and raisins Pour water over oatmeal. Let sit 20 minutes. Stir together dry ingredients. Combine sugars and butter. Beat in eggs. Stir in oatmeal, then flour, then walnuts, raisins, and coconut. Spoon into paper lined muffin pans. Bake at 350 degrees for 20 to 25 minutes. Makes 2 to 2 1/2 dozen. |
