BANANA WALNUT BREAKFAST SQUARES 
3/4 c. butter
1/3 c. honey
1/4 c. brown sugar
3 egg whites
1 tsp. vanilla
2 1/2 c. oats
1/2 c. whole wheat flour
1 tsp. cinnamon
1 tsp. nutmeg
1 tsp. baking soda
1/4 tsp. salt (optional)
1 1/2 c. mashed bananas (3 med.)
1 c. chopped walnuts

In large mixer bowl, cream butter, honey, brown sugar, egg whites and vanilla; set aside.

In large bowl, combine oats, flour, cinnamon, nutmeg, soda and salt. Add oat mixture gradually to butter mixture; mix well. Stir in banana and walnuts. Spread dough in a lightly greased 9x13x2 inch baking pan. Bake at 350 degrees for about 25 minutes. Cool completely before cutting. Serve with honey.
