BREAKFAST MUFFINS 
1/2 c. lowfat yogurt
2 egg whites, lightly beaten
3 1/2 tbsp. orange juice concentrate
1/2 c. soaked raisins (soak in hot water to plump, drain)
1/2 c. rolled oats
1/2 c. all-purpose flour
1/2 tsp. ground cinnamon
1/2 tsp. baking soda

Mix first 5 ingredients in medium bowl and set aside to soak for 10 minutes. Preheat oven to 375 degrees. Spray 6 muffin cups with no-stick cooking spray.

Combine flour, cinnamon and baking soda in a small bowl, then add to yogurt mixture. Mix until combined. Spoon immediately into sprayed cups. Bake about 25 minutes, until golden brown and a wooden pick inserted in center comes out clean. Makes 6 muffins. Double recipe for 12.
