CALIFORNIA BREAKFAST MUFFINS | |
3/4 c. oat bran 3/4 c. quick cooking oats 1/4 c. toasted wheat germ 1 c. all-purpose flour 1 tbsp. baking powder 1/2 tsp. salt 1 lg. egg plus 2 egg whites 1/2 c. unsweetened applesauce 1/2 c. honey 1/2 c. salad oil 1/3 c. milk 1/2 c. grated carrot 3/4 c. raisins 1/2 c. almonds, sliced In a small bowl mix together oat bran, oats, wheat germ, flour, baking powder and salt. In large bowl, beat to blend eggs, applesauce, honey, oil, milk, carrot, raisins and almonds. Add dry ingredients and stir until just moistened. Spoon batter into 12 greased or paper-lined 2 1/2 inch muffin cups. Bake at 375 degrees until browned, about 30 minutes. Remove from pan. Use within 1 day or freeze. |
