BAY STATE BREAKFAST MUFFINS | |
2 c. shredded unpeeled apples 1 1/3 c. sugar 1 c. chopped cranberries 1 c. shredded carrots 1 c. chopped pecans 2 1/2 c. flour 1 tbsp. baking powder 2 tsp. baking soda 1/2 tsp. salt 2 tsp. cinnamon 2 lg. eggs, beaten 1/2 c. vegetable oil In large bowl, mix apples and sugar and set aside. Prepare muffin tins with paper cups. Preheat oven to 375 degrees. Add cranberries, carrots and nuts to apple mixture. Stir well. Mix dry ingredients and add to apple mixture. Add eggs and oil and mix gently. Divide evenly among muffin cups. Bake 20-25 minutes. Cool for 5 minutes in pan and remove to rack. Serve plain or with cream cheese. |
