BLUEBERRY BREAKFAST MUFFINS 
2 c. sifted flour
4 tsp. baking powder
1/2 tsp. salt
7 tbsp. sugar
1 egg
1 c. milk
1/4 c. vegetable oil
1 c. (or slightly more!) blueberries mixed with 2 tbsp. flour

Sift together flour, baking powder, salt, and sugar. In separate bowl, beat egg, milk, and oil. Slowly fold into dry ingredients, using about one dozen strokes. Gently mix in berries. Fill muffin tins and let rest for 5 minutes. Bake for 25 to 30 minutes in preheated 400 degree oven. Makes 12 muffins. Mini-muffins make a great lunch box snack.
