BREAKFAST CASSEROLE 
1 pkg. English muffins
8 eggs
1/2 c. sour cream
1 lb. bulk pork sausage
8 oz. Cheddar cheese, shredded

Butter a 9 x 13 inch baking dish. Split muffins, butter and place butter side down in pan. Brown sausage and drain. Place sausage on top of muffins.

Beat eggs and sour cream together and pour over muffins. Top with cheese. Cover and refrigerate overnight. Bake at 350 degrees for 30-40 minutes.

I made this the low fat way...used whole wheat english muffins, turkey sausage, light/reduced fat shredded cheddar and light sour cream and it was still DELICIOUS! Great, fast, easy recipe.
