GREEN BEAN MOUSSAKA 
1 lb. ground beef
1 tbsp. flour
8 oz. tomato sauce
1/2 tsp. garlic salt
1/4 tsp. ground cinnamon
16 oz. green beans
2 eggs, slightly beaten
12 oz. cottage cheese
1/4 c. grated Parmesan cheese
2 tbsp. sliced pitted ripe olives, optional

Oven Method: Preheat oven to 375 degrees. In medium skillet, brown beef; drain fat. Stir in flour. Add tomato sauce, garlic salt and cinnamon. Place green beans in 10 x 6 x 2 inch baking dish. Spread the meat mixture atop. Combine eggs and cottage cheese; spoon over meat mixture. Sprinkle with Parmesan cheese. Bake in 375 degree oven uncovered for 25 minutes. Top with olives.

Microwave Method: In non-metal bowl, crumble beef. Cook, covered, on high for 5 minutes, stirring several times. Drain. Stir in flour. Stir in tomato sauce, garlic salt and cinnamon. Place green beans in 10 x 6 x 2 inch microwave safe baking dish; top with meat mixture. Combine eggs and cottage cheese; spoon over meat mixture. Sprinkle with Parmesan cheese. Microwave, covered, 7-8 minutes, turn twice during cooking. Top with olives. (Note: I garnish with cinnamon.)

Since microwave ovens vary in power, you may need to adjust your cooking time.
