HAMBURGER QUICHE 
1 lb. ground beef
1 c. onion, thinly sliced
1 tbsp. butter
3 tbsp. all-purpose flour
1 tsp. salt
1/4 tsp. pepper
2 c. milk
2 eggs
1 tsp. Worcestershire sauce
2 c. Cheddar cheese, shredded
1 (9-inch) baked pastry shell

Sauté beef and onion in butter until onion is soft. Blend in flour, salt and pepper. In a bowl, blend together milk, eggs and Worcestershire sauce. Add 1 cup cheese. Combine with beef mixture. Pour into pastry shell. Sprinkle remaining 1 cup cheese over top. Bake at 425°F for 20 to 25 minutes. Let stand 10 to 15 minutes before cutting into wedges.
