HAMBURGER QUICHE 
1 (9") pie shell, partially cooked
1 lb. hamburger meat
1/3 c. minced onion
1 c. shredded sharp cheddar cheese
3 eggs
1 c. whipping cream
1 1/2 tsp. salt
1/8 tsp. pepper

Prepare pastry shell. Preheat oven to 425 degrees. Brown hamburger meat and onion in skillet; drain. Set aside a small amount of meat (1/4 cup). Place remaining meat mixture in pastry shell. Sprinkle cheese over meat. Beat eggs, cream and seasonings and pour over meat and cheese. Bake 15 minutes. Reduce heat to 300 degrees and bake 30 minutes longer. Sprinkle the 1/4 cup meat on top and bake 5 minutes longer. Let quiche stand for 10 minutes before serving. For breakfast, substitute ground sausage for hamburger meat.
