SIMPLE SWEET AND SOUR CHICKEN 
1 (8 oz.) bottle Russian salad dressing
3 heaping tbsp. apricot preserves
1 env. dry onion soup mix (Lipton)
1 tbsp. lemon juice (optional)
4-6 boneless/skinless chicken breasts

Preheat oven to 350°F.

Mix in a bowl: Russian dressing, apricot preserves, Lipton onion soup mix, and lemon juice.

In a 9x13-inch baking dish (glass generally works best) lay out chicken breasts. Recipe also works well for split breast (bone in) and chicken breast tenders.

Pour mixture over chicken breasts.

Place dish in 350°F oven for approximately 30 to 45 minutes or until chicken is fully cooked. Take out of the oven. Dish is ready to serve.

Note (optional): Dish is best served over rice using mixture from the chicken like a sauce over the chicken and rice.
