TACO CASSEROLE 
1 1/2 to 2 pounds of ground beef
1 c. cooked rice
1 pkg. taco seasoning
1 can chicken and rice soup
1 small can of rotel tomatoes
1 can cream of mushroom soup
chopped onion and chopped bell pepper (optional)

Cook rice. Brown beef and drain. Place in a large bowl, browned beef, add taco seasoning, cooked rice, soup and tomato. Mix well and place in a 9x13-inch casserole dish, top with grated mild cheddar cheese. Bake until cheese melts at 350°F. Serve with chips and green salad.

Serves 8 to 10.
