HIGH DAY PIE 
2 unbaked pie shells (frozen)
1 c. sugar
1 tsp. vanilla
1 c. finely chopped pecans
2 eggs
1/2 c. melted butter
1/4 c. cornstarch
1 (6 oz.) pkg. chocolate bits

In small mixing bowl beat eggs slightly, gradually add sugar. Add melted butter. Add vanilla and mix well. Blend in cornstarch. Stir in pecans and chocolate chips. Pour into unbaked pie shells. Bake at 305 degrees for 35-45 minutes. Cool 1 hour and top with whipped cream. This pie may be frozen and then warmed in a 300 degree oven for 35-40 minutes.
