SWEET ROLL DOUGH 
1 c. milk
1 cake compressed yeast
1 1/2 c. flour
1/4 c. sugar
1/2 tsp. ground nutmeg, or mace or cardamom
1 1/2 tsp. salt
2 eggs
1/3 c. butter
Flour
Rind and juice of 1 lemon

Scald the milk; when lukewarm, dissolve the yeast in it and add 1 1/2 cups flour with desired flavoring materials. Beat thoroughly. Cover, and allow to stand until light. Add sugar, salt, eggs, butter and enough flour to knead. Allow to rise again until light then shape as desired. Bake in a moderate oven in order that they may not brown too much before fully baked. Start at 375 degrees for 5 minutes. Reduce heat to 350 degrees. Bake until done.
