CHEESY BAKED FISH 
6 catfish fillets, fresh or frozen
1 c. finely crushed cheese crackers
1/4 c. sesame seeds
1 tbsp. chopped parsley
1/2 tsp. salt
1/4 tsp. pepper
1/4 tsp. cayenne pepper
1/2 c. butter, melted
Grated Parmesan cheese, optional

Thaw fish fillets if frozen. Preheat oven to 400 degrees. Combine all ingredients except butter and cheese. Dip fillets in melted butter and roll in cracker crumbs mixture. Place fillets in a baking dish. Bake for 15-20 minutes until golden. Top with Parmesan cheese if desired.
