STOVE TOP SQUASH AND FRITO
CASSEROLE
 
5 to 6 med. yellow crookneck squash peeled and cut 1/2 inch thick
1 sm. onion, chopped
2 tbsp. butter
1/4 to 1/2 c. crushed Fritos
1 egg, well beaten
3/4 c. crushed Fritos
Salt and pepper to taste
1/2 c. grated cheese

Saute squash and onion in butter until onion is limp. Cover and simmer over low heat until squash is almost cooked (add a small amount of water if necessary). Break up squash with a spoon; add egg, Fritos, salt and pepper. Stir to combine. Cook over low heat 5 to 10 minutes until completely cooked. Top with grated cheese and let melt. Remove from heat and top with crisp, crushed Fritos. Serve immediately.
