ZUCCHINI CASSEROLE 
1 lg. green zucchini, sliced 1/4 inch thick, then cut in quarters
2 med. yellow squash, sliced 1/4 inch thick, then cut in quarters
1 chopped onion (med. size)
8 oz. sliced fresh mushrooms
1 med. carrot, grated
1 pkg. Stove Top stuffing with rice (do not prepare)
1 stick butter
1 can cream of chicken soup
1 (8 oz.) container sour cream

Partly cook zucchini and yellow squash. Drain. In a bowl mix soup and sour cream. Add grated carrot. Saute onion and mushrooms and mix lightly with drained squash. Add soup and sour cream mixture. Melt stick of butter and mix with stuffing mix.

In buttered casserole dish, layer stuffing mixture then squash mixture, ending with stuffing mixture. Bake at 350 degrees for 30 minutes in covered dish.
