CHICKEN AND BROCCOLI CASSEROLE 
1 pkg stuffing mix (pepperidge farm)
1 stick butter (melted)
1 c. cooked rice
1 can cream of chicken soup
1/2 c. chopped celery
1/2 c. chopped onion
2 c. chopped chicken
2 pkg broccoli thawed
8 oz velveeta cheese

Place half of the stuffing in a greased 2 qt casserole dish. Sauté celery, onion and broccoli until tender. Add chicken, rice, cheese and soup. Spread over stuffing and top with remaining stuffings. Drizzle with butter; cover and bake at 325°F for 40 minutes. Remove cover and brown for 10 more minutes.
