SAUTEED ZUCCHINI 
1/4 c. oil
1 lg. onion, chopped
1 to 1 1/2 lbs. zucchini, sliced (about 4 cups)
3 lg. tomatoes, peeled and chopped
1 tsp. salt
1/8 tsp. pepper
1/2 tsp. each oregano and basil
Dash of sugar if desired

Saute onion until tender. Add remaining ingredients. Cover and simmer 20 minutes or until zucchini is tender. Sprinkle with grated Romano or Parmesan cheese.
